I celebrate. And there are lots of dishes that In my country, there are a lot of reasons to people cook to offer their guests something delicious to eat. But whatever the occasion, there's one dish that you'll always see on a festive table. The dish l'm talking about is roast chicken. And the main reason why it's SO popular is that it's always a safe bet. First of all, I've never met people who have allergy to chicken. Also, it's very easy to cook. And it doesn't take much time. Another reason is that it's really hard to find someone who doe its taste.

So, it's a very simple dish, yet really tast mean it's tasty even if you just season it with salt and black pepper, rub a little oil all over the chicken skin, and cook until golden. But for special occasions, people try to make it a little more sophisticated and add garlic, herbs or sauces.

I particularly like roast chicken thighs because they have crispy skin, and because they are juicy, especially when they are marinated. What I usually do is carefully part the skin from the meat of the chicken and stuff the gap with fresh, delicate herbs such as parsley, ba and marjoram. Then I tie it up and roast some olive oil and salt. I cook until it is crispy and cooked through. So recipes may differ a little, but the result is the same: tender meat with crispy skin. It is always so good that it practically melts in the mouth.
